吃雞蛋也能護眼?補充「黃斑部色素」的高效選擇!
食用雞蛋對眼睛的「黃斑部色素密度(MPOD)」具有顯著的正面影響。綜合系統性的分析指出,規律食用雞蛋能顯著提升血液中的葉黃素與玉米黃素濃度,並進一步累積於視網膜黃斑部,增加黃斑部色素密度。
▶雞蛋維護黃斑部健康的關鍵機制與科學實證:
✅吸收率高:磷脂基質助吸收
優勢: 雖然蛋黃中的葉黃素與玉米黃素含量低於菠菜等深綠色蔬菜,但蛋黃中的色素被包裹在脂質與磷脂基質(Lipid/phospholipid matrix)中。 
效能: 油脂環境能大幅提升腸道的吸收率,使其生物利用率遠高於植物來源或一般保健品。 

✅輸送順暢:結合 HDL 精準送達視網膜
食用雞蛋可大幅增加血清中的葉黃素與玉米黃素濃度。 
體內的高密度脂蛋白(HDL)是輸送這兩種色素至視網膜的主要載體。研究顯示,受試者 HDL 中的葉黃素濃度與黃斑部中心的 MPOD 呈現顯著正相關。 

✅人體實證:長期食用可顯著提升 MPOD
✔女性(12 週): 每週吃 6 顆雞蛋持續 12 週,受試者的 MPOD 呈線性顯著增加;基期 MPOD 較低者的提升幅度更為明顯。 
✔早期黃斑部病變患者(1 年):每天吃含 1.5 顆強化葉黃素蛋黃的乳飲品持續 1 年,受試者的 MPOD 從 0.45 顯著提升至 0.52,且最佳矯正視力(BCVA)獲得顯著改善。 
✔健康成年人(4 個月):每天吃 2 顆雞蛋 持續 4 個月,在視網膜各偏心角(0.5°、1°、2°、4°)均觀察到 MPOD 的顯著增加。 

✅食用時間:建立保護機制的累積過程
短期攝取(約 90 天內):部分研究顯示,雖然每日食用雞蛋能在短期內快速讓血清葉黃素(增加 76%–77%)與玉米黃素(增加 430%)迅速顯著上升,但 MPOD 未有統計上的顯著變化。
原因分析:血液濃度的反應較快,但色素轉移並累積至視網膜黃斑部需要時間,通常需要較長期的規律攝取才能顯現於 MPOD 的測量上。

⭕後記:雞蛋(尤其是蛋黃)是優質且高吸收率的黃斑色素來源。長期規律食用雞蛋,能有效提高 MPOD,增強黃斑部過濾藍光與抗氧化的能力,進而有助於維護視覺健康並降低老年性黃斑部病變(AMD)的風險。
